Kanazawa is perhaps one of the best-preserved major Edo-period city in the country, and its compact, easily navigated central area makes it great for on-foot sightseeing. Make sure to stop by the Omicho market for fresh seafood and local produce, see the Kanazawa castle site, walk through Higashi-chaya, the geisha district, and if your Japanese is pretty good, check out the Ninja temple which is not a temple at all but a traditional house filled with hidden rooms and trapdoors (entry is only possible by joining the tours, and the tours are only given in Japanese).
